Nice to meet you! My name is Nicole (she/her, they/them).
My interest in nutrition started in high school, when I was a terrible vegetarian who ate a diet of cheerios, bagels, pizza and not much else. My doctor told me I needed to eat more protein, so I started researching what protein was, and I haven’t stopped researching since! Nowadays I’m no longer a vegetarian, but I still believe what I learned from my research then; that food should be both delicious and healing, and that nutrition care should be available and accessible for all.
I started Arcobaleni Nutrition for the same reason I became a dietitian, to provide a safe space of nutrition care, free of judgement for people who feel nutrition and healthy living isn’t for them. This could be because of body size, cultural/ethnic background, gender expression, or financial status. I am a HAES® (Health at Every Size) dietitian and a member of the Association for Size Diversity and Health. I fully believe that fatness and health are not mutually exclusive, and that weight loss doesn’t need to (and often shouldn’t) be a priority in order for a person to live a healthy lifestyle. I am a queer genderfluid person, who understands the unique nutrition needs of the trans/GNCNB community and can help with weight and health concerns related to hormonal transitioning. I am a foodie with a love for all types of cuisines and the cultures tied to them and am always willing to learn more! I believe finances shouldn’t be a barrier to nutrition care and can offer sliding scale costs upon request.
Arcobaleni is the Italian word for rainbows, and Arcobaleni nutrition operates the way I feel the healthcare field should be— seeing a person holistically, listening to and actually addressing concerns, and providing judgement free support for everyone under the rainbow!
